Caponata recipe

INGREDIENTS:

FOR 6 PERSONS:

1 CELERY, cut in slices

2 BIG EGGPLANTS cut in cubes

4 PEPPERS cut in slices without seeds

6 CARROTS in slices

1 BIG WHITE ONION in slices

PEELED TOMATOES WITHOUT SAUCE: 250 GR. in slices

2 SPOONS OF CAPERS

WHITE OLIVES: according to your taste

SALT according to your taste

SUGAR. 2 spoons

VINEGAR: 50 ml.

OLIVE OIL according to your taste

FRESH BASIL

Put in oven at 200 degrees

Cut all vegetables and put in a oven pot, add tomato, salt, oil. Cook them about 30 minutes. When is cooked, add capers with no salt, olives, 2 spoons of sugar, 50 ml of vinegar. Mix all, put again in oven for 5 minutes. Add fresh basil.

To be eaten cold or at room temperature.
